roasted zucchini with breadcrumbs
in the last week i have made this roasted zucchini twice (admittedly, the first time was e's version, and it was sublime; finer breadcrumbs are the key). the recipe is from canal house volume 1, and is so easy.
heavily seasoned breadcrumbs (chili.salt.pepper.evo.thyme.garlic), and a deeply scored zucchini, roasted til soft and well browned. kitchen magic.
